Creamy Mushroom Soup | Healthy and Hearty

With Diwali approaching in few days it is time for entertaining family and friends. I finally started to deep clean and declutter my house this Sunday. Although I am a clean freak and do extra scrubbing and cleaning every two months but when festival comes there is a different kind of excitement. I spent the whole day cleaning, my husband and daughter also contributed their part. Lunch was ordered from restaurant and later in the evening nobody was really hungry for dinner. I thought to make soup anyways!

Every single time I make mushroom soup, my daughter first takes out some for her next day’s lunch and then she eats with us for dinner. It’s absolutely perfect comfort food and we all love it beyond words. It’s an easy soup to make and is ready in 30-40 minutes. I kept the soup completely vegetarian by using low sodium vegetable broth and made it healthy by adding half and half rather than cream. But you’d think it is made with cream based on how thick, creamy, rich and truly decadent it tastes. Try it and let me know what you think, I’m sure you won’t be disappointed. And, don’t skip on the ginger, it may look a lot but it will provide plenty of mellow flavor along with a subtle kick.

Creamy Mushroom Soup | Healthy and Hearty

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 4 servings

Hearty mushroom soup for chilly fall evenings.

Ingredients

  • 2 lbs mushroom, dice roughly about 8 cups and the rest in slices for garnish
  • 1 potato, chopped
  • 1 onion, chopped
  • 1.5 tbsp finely chopped ginger
  • 1 tbsp fresh thyme, minced
  • 3-4 cups stock( low sodium vegetable broth)
  • 150- 250 ml half & half
  • salt to taste
  • 1 tsp black peppercorn
  • 2 tbsp butter and oil each

Instructions

  1. Heat oil in a pot, add butter. Add sliced mushrooms.
  2. Saute until they are golden brown. Remove on an absorbent paper.
  3. In the same pot, add the onions, ginger and potato along with a pinch of salt. Saute until golden.
  4. Turn up the heat and add the mushrooms. Saute the mushrooms until they starts to brown.
  5. Add stock, salt, black peppercorn, and thyme (reserve some for garnish).
  6. Bring it to boil, cover and reduce heat. Simmer until potatoes and mushrooms are tender, about 10 minutes.
  7. Blend soup in a blender until smooth. A handheld blender would be fine,too.
  8. Stir in half and half . Adjust seasoning.
  9. Ladle hot soup into bowls.
  10. Before serving garnish with reserved finely minced thyme and sliced mushrooms.

    Hahaha…Diwali preps…., I can understand the spirit behind Diwali cleaning. Its a festival after all and a good time to indulge in whatever you want. Good to see a soup recipe instead of a sweet…..I simply love the neat look of this mushroom soup with the goodness of ginger.
    Have a wonderful festive cleaning and by the way your besan sabji almost reminded me of my grandmother. Nice to see someone bringing up old forgotten recipes.

    I really love this! I love mushroom soup but for some reason, never thought to make it at home. I love how easy your recipe is and the ginger is a surprise and one I really like the sound of! I could use a big, big bowl. Happy Diwali – sounds like a wonderful celebration coming up.

    I could eat bowlfuls of mushroom soup if it looks like that. In fact ginger is one ingredient I can never have enough of. I think kids have an inclination towards mushrooms and babycorn…mine do too. I will have to make this one for them. Hope you have a great Diwali prep and of course a wonderful Diwali celebration.

    Not to brag but my house is always spit and span, so there’s no need to spring clean etc etc. I am my usual, work, home, blog etc etc. Nothing exciting about Diwali which is different now compared to few years back, big open house with lots of friends. Its a family affair with each of us bringing one dish.

    My food is always rice and dishes but my other half is a big fan of soups esp mushrooms. He loves it esp for his night meal and I shall try your recipe with the amount of ginger as stated. Its lovely, thick and love the the aroma of thyme.

    Bal , the mushroom soup that I’ve tried so far came from a can 😛 I know , I know lol Fresh mushrooms are a tad expensive here *sigh* Anyway , your mushroom soup looks FANTASTIC and I’m really sure that it taste as good as it looks ! Two thumbs up for your photos and presentation !
