Besan is one of the versatile flour I know of. Its been a staple in my kitchen and I relish it in one form or another. It can be mixed into the flours for flat bread and pizza crust, used like eggs to make cheelas, as a binder for koftas, batter for deep frying, thickener for curries, base for exotic sweets, crunchy drops for flavored yogurt and many more.
Butternut Squash Halwa
Halwa is a pure pleasure. It is an aromatic sweet pudding typically served as a dessert, with coffee or tea after a meal, or as a snack. It can be prepared from flour, fruit, vegetable, lentil or nuts. This halwa calls for few pantry staples: Butternut squash, sugar, oil, cardamom and of course a few goji berries for color contrast, but raisins would be equally fine.
Gobhi Paratha
Paratha is a popular breakfast food in North India, especially Punjabi household. I remember those days in India when I used to eat paratha every other day with malai (cream collected from boiled milk) or churned butter. Now with change in lifestyle and dietary habit I don’t eat paratha on regular basis but whenever I do, I enjoy with whipped butter.
Since paratha is usually stuffed with some kind of vegetable filing, it is best suited for the start of the day, preferably a lazy Sunday brunch, when you have no time to cook separate breakfast and lunch. It is generally served with just pickle, butter and yogurt, but it goes well with any spiced curry.Can anyone guess what curry have I served with gobhi paratha?

Sour and Spicy Fish Curry ( Asam Pedas)
Every culture has their own version of making herb and spice pastes that lend a unique and distinctive flavor to the dish. Malaysians use a basic spice paste recipe in many of their curries and stir fries, which they call Rempah. My recipe of sour and spicy fish curry is inspired from two of Nava’s recipes, using rempah paste.
Almond Fennel Biscotti / Cake Rusk
When it is pouring heavily all that your heart desires is a hot cup of masala chai or coffee. And, because I believe coffee and tea are meant to be enjoyed with a snack, there’s nothing better than having a biscotti. It is my best all time favorite snack since childhood. My recipe of almond fennel seed biscotti is a mix of Indian cake rusk and American style biscotti.
Sauteed bathua
Bathua is a green leaf vegetable, grown in Northern India as a winter crop. In many parts of the world it is considered a weed and goes by funny name, such as fat hen, goose foot, lamb quarters, pigweed etc. I am sure most of you are familiar with it even if you don’t recognise by name, you might have seen one or two bathua plant popping up in your backyard with dandelions.
