Aval Ladoo / Red Rice Flakes Balls

Diwali is not far away and I hope my Indian friends are all geared up for the festival. It is the festival of lights. Both Hindus and Sikhs celebrate it with pomp and style, from decorating the house to lighting traditional lamps, to bursting fire crackers and to gorging on yummy sweets.

So, during Diwali, many different snacks and sweets are prepared in nearly every house-hold, to be enjoyed and distributed to friends and family. I wanted to make all sweets as healthy as possible this year with no sugar or with healthy alternative options. So after the success of my sugar free coconut burfi I made aval ladoo.

Tandoori Gobhi

Tandoori, the name evokes the exotic image of bright red color chicken pieces but gobhi (cauliflower) is the alternative to tandoori chicken for Veggie lovers.

I can’t believe I never shared a tandoori gobhi recipe on my blog. I eat it more often than chicken. When I read a friend’s post of how he enjoyed tandoori food on his vacation to India, I had an intense craving to make some. So I went ahead and whipped together the most simplest and easiest recipe: tandoori gobhi.

Grilled Salmon Steak

Good morning beautiful friends!

Salmon is one of my favorite types of fish. Even though it is comparatively expensive to other fish I choose to cook with it more often because it tastes great when baked or grilled with select herb and spices. There are plenty of marinades you can use with salmon and it responds really well. The following recipe uses yogurt, oil, lemon chili powder and carom seeds. It is very convenient for a weeknight meal and also pretty enough to serve to guests for lunch or dinner with stir fried vegetables, and some bread or rice.

My summer lunches revolve around salads like this one, made with gluten free grains, garden fresh vegetables, some sort of protein and fresh herbs or greens. I do try to keep things interesting so as not to eat the same thing all the time, but I admit I’ve become a little obsessed on this particular one lately. It is full of flavor, refreshing and filling, with a satisfying mix of textures from the fresh cucumber, juicy & ripe grape tomatoes, sweet green chickpeas and the chewy wholegrain sorghum.

Crepes are popular not only in France but elsewhere in the world where they go by other names and adaptations. India has dosas and cheelas, Russia has blini and Italy has crespelle. Generally, French crepe batter is made from all-purpose flour, eggs, milk, and butter, but I took the liberty to skip all of them and used whole grain gluten free flour and coconut milk instead. This is the perfect egg free, gluten free, dairy free, soy and corn free recipe for a savory and sweet filling.

Pesto Pasta with Fresh Garbanzo Beans

Summer calls for simple, easy and fresh meals. The kind that is big on taste, but requires little effort to prepare. If you love to eat pasta salads in summer, which I can’t think of a single reason why you wouldn’t, then this is the recipe you will make frequently! This pesto pasta with fresh garbanzo beans is light, satisfying, flavorful and a breeze to make. It’s great for lunch or dinner, to take to potlucks, picnics or barbecues.

Shami Kebab

Shami kebabs are the very popular variety of kebabs in Indian cuisine and also in other South Asian countries. These kebabs involve slow cooking the boneless meat with lentils then blended to form a smooth dough. The mixture is then shaped into discs and shallow fried until crispy on the outside and soft on inside. They are highly addictive and a perfect snack when entertaining guests or have for dinner with salad. They are also perfect in the lunchbox and are very filling and healthy.
