Meethe Chawal / Sweet Saffron Rice

Hello everyone, Happy New year!!!

It is after 5 months that I am logging in to my blog. Yes, I am all well.

I have been really busy with various responsibilities. We sold our house after living in it for 12 years and moved into a new one that we built ourselves. We knew nothing about building and even though we hired tradesmen to do all the jobs it was a lot of work managing the whole design and construction process. Days were long, stressful and exhausting, and I was overwhelmed in the beginning but supported my husband fully in carrying the project through from start to finish. The result is a home we love and one that reflects our tastes and preferences.
I am starting the year with a seductive recipe that I have grown up eating and love it.

Healthy Homemade Chikki / Brittle – three types

Chikki is Indian version of brittle made with jaggery, nuts and seeds. Jaggery is a type of unrefined sugar consumed in the Indian subcontinent and South east Asia. If you can not source jaggery where you live i also have a chikki recipe made with coconut palm sugar and maple syrup.

I was so pleased when Nava emailed and asked me to be a guest blogger, while she is traveling. Since it was festivity time when she contacted me sweets were on my mind hence I thought to pamper your taste buds with a festival sweet. So here I have for you a delicious post of besan ladoo.

Kaju Katli (cashew nut burfi)

Its Diwali in two days, the festive and beautiful times of the year, when we forget what is going on with our busy schedules and gather with loved ones and celebrate for different reasons. As some of you may not know, this day has a deep significance for the Sikh community. They celebrate it as Bandi chor diwas, which means day of liberation. The historical event is a reminder to look beyond ourselves and use the privileges that has been bestowed upon us, for others who are less fortunate. The idea is that by making others happy we are in turn making ourselves happier.

So with that I wish everyone a very happy safe, joyous and sparkling Diwali and bring you a nice little treat from my gluten free kitchen- Kaju Katli. It is one of the simplest and delicious sweet to make with two ingredients.

Urad Daal Pinni / Sweet Lentil Discs

People in India indulge in high calorie and protein rich foods in winters to drive away the chill and provide warmth and energy to the body. My recipe today is one such sweet or energy snack which is very popular in Punjab. It is made from ground urad lentil, flax meal and solidify milk. I hope you will all like it as much as we do.
