Kalakand
Kalakand is a soft milk based sweet with a hint of kewra and cardamom. It is made with concentrated milk called khoya and fresh paneer. This traditional process of kalakand takes some time to make so to speed up the process I use ricotta cheese and condensed milk. Just two ingredients! Whether it is cooked in a traditional way or in an instant way, it has the same rich taste and grainy texture.
I published Kalakand back in November 2014 under the name ricotta cheese burfi. It’s really delicious and I am updating the recipe by cutting back on sugar which means I increased the amount of ricotta cheese to condensed milk.

Diwali is not far away and I hope my Indian friends are all geared up for the festival. It is the festival of lights. Both Hindus and Sikhs celebrate it with pomp and style, from decorating the house to lighting traditional lamps, to bursting fire crackers and to gorging on yummy sweets.
So, during Diwali, many different snacks and sweets are prepared in nearly every house-hold, to be enjoyed and distributed to friends and family. I wanted to make all sweets as healthy as possible this year with no sugar or with healthy alternative options. So after the success of my sugar free coconut burfi I made aval ladoo.

It is after 5 months that I am logging in to my blog. Yes, I am all well.
I have been really busy with various responsibilities. We sold our house after living in it for 12 years and moved into a new one that we built ourselves. We knew nothing about building and even though we hired tradesmen to do all the jobs it was a lot of work managing the whole design and construction process. Days were long, stressful and exhausting, and I was overwhelmed in the beginning but supported my husband fully in carrying the project through from start to finish. The result is a home we love and one that reflects our tastes and preferences.
I am starting the year with a seductive recipe that I have grown up eating and love it.
