Naturally Sweetened Coconut Burfi & Homemade Chai Spice Mix (Diwali Gift Idea)

Sweets are a part of Diwali but we do not really need refined sugar to enjoy these sweets. I developed a coconut burfi recipe that is naturally sweetened and I am proud to share that today. Diwali is also the occasion when you show love and affection to your dear ones by gifting things that they’ll treasure. I also take pleasure in sharing recipe for “chai spice mix” that I make and give every year to my friends.

It’s been a long time since I posted a cookie recipe on my blog. Well, that’s because I rarely make cookies for myself. This doesn’t mean that I don’t bake cookies at all, my daughter’s cookie jar never goes empty. She has to have some kind of chocolate cookie to snack on and she can even eat cookies for breakfast. Over the weekend I was baking cookies to put in the Christmas goodie bags for my friends and staff. I thought it wouldn’t be wrong if I add some gluten free cookies in it. These delightfully simple cookies are filled with tons of texture from coconut flakes and oats, and subtly flavored with lime zest.

Polenta Upma

There are many reasons to love polenta. I often make a large tray of polenta and freeze the leftover so that it can be used for fries, croutons, tapas snacks and upma. When I did a post on polenta cakes with crunchy cilantro pesto, I said to freeze the scraps that you get from cutting polenta rounds for anther recipe. Upma, was that recipe I was talking about.
