Methi Paneer

by Balvinder. 9 Comments

Fenugreek leaves, also called Kasuri Methi, is an herb/ vegetable with a bitter but an addictive taste. I find myself adding it to everything from rice, to chicken and also rotis. People often like to mix methi with spinach to mellow out the bitterness. I am sharing a recipe where methi is used as a vegetable and to which paneer is added, and so the sweetness and richness of paneer also mellows out the bitterness of methi. This is a highly fragrant winter dish that goes beautifully with almost any indian bread-chapatis, naans, rotis or parathas or with some daal and rice.

Methi Malai Choliya

Apparently, I am on a green garbanzo kick lately. First it was healthy chaat from these beans and now today’s recipe.

It is a unique combination of 3 ingredients: methi (fenugreek), malai (cream) and matar (peas). However the recipe below is made with frozen green garbanzo beans instead of peas. Sweet, succulent and packed with several vital nutrients both are easily interchangeable in many recipes. I love the complex flavors of this dish. The mild bitterness of fenugreek leaves is wonderfully balanced with sweet green garbanzo beans and smooth creamy gravy.

Methi Wali Makki ki Roti

by Balvinder. 27 Comments

Punjab is India’s ‘bread basket’ and flat breads are made fresh everyday from various grain and bean flours such as wheat, sorghum, barley, buckwheat, corn and chickpea. Come winters and, it’s makki ki roti or yellow corn flat bread, that becomes staple in every punjabi household – be it breakfast, lunch or dinner. Corn often referred to as maize in Punjab, is gluten free which makes it a good option for those who are allergic to wheat.

Traditionally, Makki ki roti makes a splendid combination with sarson ka saag (cooked mustard greens) but it can also be cooked in other ways to relish with yogurt and butter. This recipe is flavored with fresh methi (fenugreek leaves). Rich, pungent and slightly bitter, fenugreek leaves are extremely nutritious and turns a plain makki ki roti into something delicious and healthy!
