Lemon Pudding Cake with Fresh Berry Sauce

With all the things going on and all the things I had to do, I totally forgot it’s been two years already for my blog. Truthfully, I am one of those people who can remember everything related to my family but forget things concerning myself. My husband often jokes that I am getting old and need to train my brain to function properly.

Well, jokes apart I think  I really need to start using reminder app., this was the second important thing that I forgot this month.

 

 

I started my first blog post on a different blogging platform. It was a kind of test drive and I wasn’t sure what I was doing. It took me a while to understand the ins and outs and soon I realized that my newest found hobby was the most time consuming thing. I wanted  my blog to be well known but getting the word around there was the tedious thing to do. We all are different and have different priorities in life. I happily made some choices that did not bring me a big audience but it helped me to balance my life with blogging as another hobby. You won’t find me active on social networking sites and visiting too many blogs.

Two years is not a long time though, but I am quite happy with what it brought me so far. I have learnt, to be myself. Every single person has a niche in this world and I believe I have found mine. The recipes I post, the write up, the images, the layout, everything speaks for simplicity of my blog. That is who I am and what this blog is about.

 

 

To celebrate my two years, I am posting this beautiful light lemon pudding cake which I made for my husband’s birthday. And, I would like to ask my readers to celebrate with me and genuinely share with me your favorite simpleglutenfreekitchen post (not necessary). I also want to thank all of you who read my blog and follow me by email. There are some bloggers that deserve special thanks for supporting, inspiring and bearing with me since food buzz days.

Now on to the recipe,

We like light desserts with fresh berries in our house and these pudding cakes are just that. Super moist, tender,  delicious, easy to make and bursting with, you guessed it …lemon flavor! The berry sauce on top adds a nice burst of summer freshness that will have you coming back for seconds. Great for summer indulgence!

2nd blogiversary – Lemon Pudding Cake with Fresh Berry Sauce

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 4 pudding cakes

Super simple, delicious and impressive lemon pudding cakes

Ingredients

    For lemon pudding cakes
  • 1/2 cup almond flour/processed blanched almonds
  • 2 tbsp corn starch
  • 85 g / 1/2 cup ( 1 reduced 2 tbsp from it) white granulated sugar
  • 2/3 cup buttermilk
  • 2 eggs
  • zest of one lemon
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • For fresh berry sauce
  • 2 cups mixed seasonal berries ( I used blueberries and raspberries)
  • 2 tbsp sugar

Instructions

  1. Preheat oven to 325°F. Butter 4 (200ml) ramekins. Set in a shallow baking pan.
  2. In a medium bowl combine processed blanched almonds, corn starch, sugar, salt and lemon zest.
  3. In another bowl add egg yolks, buttermilk, lemon juice and beat until well combined.
  4. Stir in the dry flour mixture.
  5. In another bowl or in mixer beat egg whites until you get stiff peaks then combine the two mixtures by gently folding them together, a little at a time.
  6. Divide evenly among prepared ramekins. Fill baking tray with hot water halfway up to the sides of the ramekins.
  7. Bake for 35- 40 minutes on the middle rack of the oven, until the top have a nice golden brown color.
  8. Remove from oven and water bath, allow to cool slightly before inverting the cake onto a plate.
  9. Serve, spooned with fresh berry sauce.

  11. Toss the berries and sugar together in a bowl.
  12. Let stand for 15 minutes until the fruit is soft and juices run out.
  13. Puree half the berries in a blender and mix with the remaining whole berries.

Notes

To invert pudding cake on plate run knife around the edges of the cake to loosen and gently tap at the bottom. The cake should drop out. Recipe adapted from here
