Gluten Free Banana Split Cake

I have always loved banana nut muffins but it never dawned on me to bake with bananas at home. When I saw Banana split cake at Flourtrader, it immediately caught my attention. She surprises me every time I visit her blog with her creativity and unique titles. This cake, she described as being very moist and full of different flavors, like chocolate chips, pineapple, strawberries and banana. Gluten free cakes often get dry very quickly if made plain so I’m always looking for ideas that keep them moist. Even though Tina’s cake was not gluten free but her using fruit in the cake and with my past experience, I learned that fruits and fruit puree keep GF cakes moist, so my first instinct was to bake this cake.

 

When I bake something for the first time I generally follow the recipe exactly as written. After that, I adapt it to my own taste if needed. To convert a regular cake to gluten free you need to adjust many things, the moisture level, the type of gluten free flour blend and other things. My first attempt at this cake was not successful. The cake crumbled to pieces (picture at the end of post) even though the crumbs tasted really delicious. My cake batter was very creamy and loose. It needed more binding agent to hold all the ingredients together. I halved and altered the recipe with what ever I thought was appropriate.

Finally, this last friday I tried again and it came out perfectly moist and soft and held itself pretty well with all the great flavors in every bite. Unlike Tina’s cake I iced my cake with chocolate glaze only because the top part does not look as golden compared to the part covered by pan.

GLUTEN FREE BANANA SPLIT CAKE
adapted from Flourtrader
Ingredients for Cake
2 3/4 cup regular flour (1 cup GF all purpose flour + 1/2 cup almond meal)
2 eggs ( 2 eggs at room temperature)
1 cup chopped bananas (1/2 cup)

1/2 tsp xanthum gum

2 1/2 tsp baking powder (1.5 tsp)
1 tsp salt (1/2 tsp)
1/2 cup butter ( 1/4 cup grape seed /vegetable oil)
1/2 cup buttermilk at room temperature (1/4 cup)
1 1/2 cup chopped strawberries (none, because they were making the batter very loose)
1/4 cup chopped toasted walnuts (1/3 cup)
1 1/4 cup semi sweet chocolate chips (1/3 cup mixed white and dark chocolate chips)
2/3 cup mashed banana (1/3 cup)
15.5 oz can pineapple tidbits (1/3 cup, chopped small with 1.5 tbsp syrup)
1 tsp vanilla extract (1/2 tsp)
Ingredients for Glaze:
3 tbsp butter (2 tbsp)
3 tbsp corn syrup ( 2tbsp milk + 1/4 cup icing sugar)
3/4 cup semi sweet chocolate chips (1/2 cup)
1/4 cup chopped toasted walnuts for topping

Method:
Take a 8″ bundt pan or a 8″x2″ round pan and insert a flute. Generously grease and then dust with flour.
Whisk rice flour mix, baking powder, salt and almond meal in a bowl. In a separate bowl whisk sugar, grapeseed or vegetable oil for 45 seconds.

Then beat in the egg, mashed banana and vanilla extract until evenly distributed. Fold in the flour into eggs mixture alternately with buttermilk, beginning and ending with the flour.
Fold in mixed chocolate chips and walnuts. Then fold in the sliced bananas and pineapple pieces with the 1.5 tbsp juice.

Spoon batter into the greased pan, smoothing the top.

Bake at 350 degrees f for 30 minutes or until cake tests done.

Cool on wire rack for 10 minutes. Remove from pan and cool thoroughly on rack before glazing.

To make the glaze, melt butter and chocolate chips on a bowl of simmering water.

Add milk to melted chocolate chips mixture for a pouring consistency.

Remove from heat; add sifted icing sugar and mix nicely to get a smooth mixture.

Place parchment or wax paper under the rack that is holding the cake. Pour chocolate glaze over the cake and top with toasted walnuts.
