Very Berry Gluten Free Chocolate layer Cake

It was my dear husband’s birthday and he loves berries, especially blueberries. His birthday falls when summer is at the peak and berries are in abundant. I was initially planning to use berries in a parfait instead of a cake this time, but when I saw a box of gluten free chocolate cake mix, my thoughts instantly changed to make a layered chocolate cake. I had ever used GF boxed cake mix before but I thought to give it a try.
The cake came out from oven looking good, but when i cut it into halves to layer it seemed a bit dry. I googled, how to fix dry cake. There were different solutions to refresh the dry cake, out of which I like the one that said to moisten with flavored liqueur or syrup. My husband is not at all a fan of sugary syrup so I chose to simply brush with Cointreau instead.ย  Then, I covered the layers with whipped cream and the Cointreau soaked layers all covered by the dryness of the cake. My husband was happy and so was I.
Ingredients

1 box store bought chocolate cake mix ( I used Glutino Chocolate mix)

500ml whipping cream

1/4 cup icing sugar

Assorted Berries

3-4 tbsp or more Cointreau

Method:

Give all berries a quick wash and let it dry on tea towel or in strainer. (if using blackberries cut them in half and strawberries in slices).

Bake 8″cake according to box instructions (you will need melted butter and eggs). Allow the cake to cool completely.

Meanwhile in separate mixing bowl whisk whipping cream with icing sugar until stiff peaks form.

Remove the cake from its pan divide it horizontally into equal parts, so that you have two flat surface.

Brush with Cointreau over the top of the both cake halves.

Place one layer of cake on a serving plate or board or a glass dish with 2 1/2- 3″ high sides. Cover it with whipped cream. Top it with berries. Repeat the same with other layer of cake.

Refrigerate until ready to eat, better if you keep overnight, though it may be difficult to resist.

    Oh really like the ricotta in there and I am such a fan of berries. We have to take advantage while they are here. Hmm may play with adding oil or water for your mix next time so it is more moist?

    Happy Birthday to your husband! He’s a lucky guy who married to a great cook! I never used cake box or even make cake from scratch! Layered cake seems challenging yet it’s worthy at the end when you see the cake is beautifully layered. I love the brush with cointreau too. I’m sure that made your husband happy. ๐Ÿ™‚
