Date and Seeds Bliss Bites

by Balvinder. 6 Comments

There is literally no end to the ways you can make energy or bliss bites. They are super simple to make and win on all fronts. In case you’re new to the energy bites scene, they’re delectable bite-sized, no bake treats of nuts, seeds, nut butters, oats, sweetener and sometimes even chocolate. You can basically use any combination of ingredients you want!  This energy bite recipe doesn’t contain any gluten, dairy, grains or refined sugar—only healthy seeds and date paste. These are vegan and paleo too. Plus, you can whip up a batch in 15 minutes!

The combo of sesame, pumpkin, sunflower and dates is so delicious. I added fennel seeds for licorice-y anise flavor. If you are not of fan fennel seeds feel free to add whatever other seeds and flavor you want.

To make these bites, you just combine all the ingredients in a food processor, and then roll them into balls. They don’t require refrigeration and are easily transportable. I keep a little zip-lock bag of these healthy bites in the glove compartment of my car for easy snacking.

Date and Seed Bliss Bites

Total Time: 15 minutes

Ingredients

  • 1 cup date paste
  • 1 cup pumpkin seeds
  • 1 cup sun flower seeds
  • 1/4 cup sesame or flax seeds
  • 1/4 cup fennel seeds

Instructions

  1. Place all seeds (if you slightly dry roast them, the bites would taste wonderful but it's not necessary) in the bowl of your food processor and process just until they turn coarse (not powder).
  2. Add date paste and pulse until combined.
  3. Dump the still crumbly mixture on tray.
  4. Using a table spoon, scoop some mixture in your hand (use cling wrap to avoid getting the mixture sticking to your hands) Gloves won't work.
  5. Firmly press it 2 to 3 times with your fist. Later roll it to a nice round shape.
  6. Once all of the mixture is rolled into balls, cover and store in the container for a quick snack.
  7. You may easily store it on the counter for 2 weeks (they won't go bad after but will dry out a bit).

Love energy balls. I usually soak my dates, and then run it through a food processor with different ingredients each time. I don’t think I’ve ever come across date paste before? Love the crunch in them 🙂

Medjool dates don’t need soaking. They are really soft but since I like smooth paste I do steam them for 5 minutes. This way you can keep it in the fridge for 2-3 months. The recipe is on my blog here . I use it as a spread for dry and non savory crackers.

Absolutely wonderful, I especially like the fennel seeds in there, I have become addicted to their flavor, but I have to say I have only used in savory dishes, never in desserts. What a great idea!
