Warm Potato Salad with Garlic and Grainy Mustard

As the weather turns colder I find that I don’t want to eat as many leafy green salads as I do other times of the year. I like heartier salads with a little texture. That’s when warm potato salad comes to the rescue.

 

 

This potato salad makes for a perfect winter side with just about everything and is very satisfying. It is incredibly simple and easy to make, doesn’t require any peeling or slicing. You boil baby potatoes until fork tender. After boiling, the unpeeled potatoes are coated in a tempering of mustard seeds and garlic before being tossed with creamy grainy mustard, honey and herbs. I’m typically a fan of salads with a bit of tang so I also added apple cider vinegar. The flavors and textures are spot on.

 

 

It’s good to serve this potato salad as soon it is made but you can serve it cold if you like. If you must make it in advance and refrigerate it, reheat it in the microwave or instant pot before serving.

Warm Potato Salad with Garlic and Grainy Mustard

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 3 -4 servings

A potato salad that goes well with just about everything.

Ingredients

  • 1.5 lbs mini potatoes
  • 1 tbsp (+) grainy mustard ( made it from scratch)
  • 1 tbsp honey
  • 1/2 tsp brown mustard seeds
  • 2 cloves garlic, chopped
  • 1 tbsp lemon juice or apple cider
  • 1 tbsp oil
  • 2 tbsp herbs (chives, cilantro, rosemary)
  • Salt and black pepper to taste

Instructions

  1. Boil potatoes with salt until fork tender.
  2. Drain gently in a colander.
  3. In the same pot heat oil.
  4. When heated, add mustard seeds, let it crackle.
  5. Next add garlic. Stir-fry just until fragrant, 10 to 20 seconds.
  6. Add the potatoes to the pot. Toss to mix in the garlic and coat the potatoes with oil. Turn off the heat. Add grainy mustard, salt and black pepper, lemon juice and herbs.
  7. Serve warm.

    What a great combination: mustard, honey, garlic, and lemon juice. I would definitely lean toward rosemary.
