Healthy Strawberry Banana Cobbler

Strawberry season will be here soon and what better way to use strawberries than in this strawberry banana cobbler.  This is the recipe you cannot miss at all.  I say this, because you won’t find an easier or more delightful dessert than this simple strawberry cobbler. And the cookie-like crust on top of this strawberry cobbler recipe gives way to a juicy center, bursting with sweetness with no sugar. Cobbler is a dessert consisting of fruit, poured into a baking dish and covered with a batter, biscuit, or dumpling, and then baked. Doesn’t that sound simple enough for a yummy dessert anytime of the year. The added bonus is that it’s dietary friendly.  It can be tricky to bring a dessert to a gathering where there are dietary restrictions. This gluten free Strawberry Banana Cobbler, however, makes it easy because it’s one of the few desserts that is also egg free, refined sugar free, soy free, and corn free. It require minor adjustment to make it vegan and nut free.

 

 

Fresh vs. Frozen Strawberries

If you have the choice between fresh and frozen, Personally I love fresh strawberries and use frozen ones only in smoothies. Plus, fresh strawberries deliver the sweetest, deepest flavor. But, you can use frozen berries if that’s what’s available to you. Take care, however, that you thoroughly thaw and drain the strawberries of excess moisture. Add cornstarch to help absorb the additional water that frozen strawberries produce.

How do you make this strawberry cobbler?

Start by rinsing strawberries, stem them and cut them in half.  (watch my video on you tube to check out the easy way to stem the strawberries). If the strawberries are very big cut them in quarters if they’re small, keep them whole, that’ll be okay. You’ll need 4 cups strawberries, which is over 1 pound.  Choose strawberries that are deep red, firm, fragrant and fully ripe – but not soft. I added a few raspberries, too, although you could just use all strawberries.

Place a tbsp of butter in 6 x 10-inch baking pan. Turn oven on to 300°F. Put baking pan in the oven to let the butter melt. It will take about 5-7 minutes. Once melted remove from the oven. If you want to make this recipe completely vegan feel free to substitute butter for the coconut oil.

Mash a banana. I use this to sweeten the fruit mixture. The riper the banana, the sweeter it will be. I prefer not to use too ripe banana otherwise it gets too sweet.

Toss strawberries into the mashed banana.

For blanketing the strawberry mixture, combine, sorghum flour, GF all-purpose flour, baking powder, coconut palm sugar, milk, and vanilla extract to a thick batter, like a cookie dough.

Add the strawberries banana to the melted butter baking dish. Spread into an even layer. Then drop the dough by spoonful over the strawberries. I like to drop the dough in small rounds with a cookie scoop, giving it an appearance of a cobbled road with some of the strawberries peeking through.

Bake in the preheated oven until the topping is golden brown. Allow to cool a bit before serving so the strawberries can set up a little.

 

 

Optional: A drizzle of Nutella sauce over the top which I could not resist making. To be honest, the main reason I made this Nutella sauce was to pour it on the leftover hard vanilla ice-cream I saw in my freezer. I have added two tablespoon cream to thin out 1/3 cup Nutella. You can use more to make it thinner or use 2% or whole milk instead of cream. I always have cream because I like adding cream to my coffee and granola ( just a little).

Healthy Strawberry Banana Cobbler

Total Time: 55 minutes

Yield: 4 servings

Healthy and simple strawberry banana cobbler. Enjoy as a breakfast dish, or add on ice cream and relish it for dessert!

Ingredients

  • For the filling
  • 4-5 cups strawberries, washed, dried, hulled, and halved (quartered if very big)
  • 1 banana, sliced
  • 1 tbsp butter or non-dairy butter
  • Topping
  • 1/2 cup sorghum flour
  • 1/2 cup Gf all-purpose flour
  • 2 1/2 tbsp coconut palm sugar
  • 1/4 cup butter or coconut butter, diced
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 (+-) cup almond milk or coconut milk
  • 1 tsp vanilla extract
  • Garnish (optional)
  • 1/3 cup Nutella
  • 2 tbsp cream

Instructions

  1. Preheat the oven to 300°F.
  2. In a medium bowl, mash the sliced banana. Add the strawberries. Mix
  3. Place 1 tbsp butter in a 9x9" baking dish. Place it in the oven until the butter melts.
  4. In a large bowl, combine the sorghum flour, GF all-purpose flour, coconut palm sugar, baking powder and salt.
  5. Using two butter knives or forks smash butter until small crumb form.
  6. Add milk and vanilla extract, stirring until a wet shaggy dough forms.
  7. Spoon the fruit mixture into the baking dish over the melted butter.
  8. Drop large spoonfuls of the cookie dough on top, leaving some space between each.
  9. Bake until the top is golden brown and cooked through, 40 to 45 minutes.
  10. While the cobbler is in the oven make Nutella sauce.
  11. Add Nutella and cream in a small non-stick saucepan and cook over medium heat.
  12. Keep stirring until you have a smooth consistency.
  13. Remove from heat and pour it in a cup.
  14. When the cobbler is done let it cool 10 to 15 minutes. Garnish with a drizzle of Nutella sauce before serving.
  15. In Air fryer (cut recipe in half)
  16. Place butter in baking dish and place it in the air fryer basket. Set temperature for 300 deg F for 2 minutes.
  17. Follow steps 4-8.If you wish can sprinkle chocolate chips.
  18. Place the baking dish in air fryer basket. Air fry for 15 minutes at 300 degrees F.
  19. After 15 minutes increase the temperature to 325 and bake for another 10 minutes.
