Sambal Shrimp

Shrimp is one of my favorite things to cook and eat because it’s so versatile. You can serve it for an appetizer on top of a salad or as a quick and easy low carb dish with rice and vegetables.
The ingredients are easily available everywhere. Feel free to use fresh or frozen shrimp. I usually buy frozen shrimp that are peeled and deveined. They are easy to thaw in the fridge or submerge in cold water. And while they thaw you can prepare rice and vegetables. Whether you had a busy day or not, this sambal shrimp is a perfect recipe for a weeknight meal.
Sambal Shrimp
Marinade
907 g shrimp, peeled and deveined
1 1/2 tbsp cornstarch
1-2 tbsp sherry
1 tbsp soy sauce
Sauce
3 tbsp sambal
3 tbsp rice vinegar
1 tbsp (+) sugar
Stir fry
2 garlic cloves, minced
1/2″ piece ginger , minced
2 green onion, thinly sliced
2 tbsp oil
Method:
Combine the marinade ingredients in a medium size bowl and mix well. Let sit for 5 minutes while preparing the rest of the ingredients.
In a small bowl whisk together, rice vinegar, sambal and sugar.
In a large skillet, heat 2 tbsp of oil.
Add garlic and ginger. Stir and cook for a few seconds to release the fragrance.
Add the shrimp. Cook until pink and opaque.
Add the sauce, cook and stir until it thickens slightly and shrimp gets curled.
Transfer to a platter and garnish with green onion.
Serve as a main with rice and vegetables.

    I have never had sambal olek before – you recipe is very new to me and I found it quite intriguing.The shrimp looks so tempting and the vegetarian chowmein too – both are a favorite of my husband’s – so have to give them a try:)Thanks for sharing the iron wok cleaning tip, it will be very useful to me!Do not forget to pick up your award at my place btw – it is still waiting for you:)

    Like you, I am trying very hard to do away with the Maggi sauces, simply because of the MSC. Lovely outcome you have done with sambal olek and prawns. Sounds so Asian and we use more of Chinese wine instead of Sherry.

    I love prawn sambal although I’ve never added sherry before, I suppose it’s like adding Chinese rice wine, isn’t it? Must give it a try! x

      I am sure this would be available everywhere. Sambal olek are ground red chillies in vinegar.
