100th Post Give Away and Gluten Free Red Velvet Cupcakes

Wow! I can’t believe as to how quickly the milestone came up. The journey of my blogging started rather unplanned in end of July. Over this period I have met lovely people and their feedback has kept me going. Without my followers and silent readers this blog would not have reached thus far. I really appreciate the love you have given to a gluten free blog. So as a way to thank you all I would like to give away this book!!! by Jess Mcloskey *my first ever giveaway*

 

 

This 145 page book has recipes for everyone from chocolate balls, brittle, tapenade, relishes, infused oil, anything you say . It also shows you how to make and wrap gift boxes. I will be posting one of the delicacy from this book when I announce the winner.

Now, for this milestone I would like to share gluten free red velvet cupcakes. When I bake a new recipe I search one blog ‘Joy Of baking’. This time I decided to also check my baker friends Tina and Lizzy’s blog who top in my best blog list. Tina had a ginger bread latte cupcake recipe with a special process of baking soda which I am going to use in these red cupcakes with white vinegar.

My Goodness, Lizzy has three recipes. Looking at her red velvet cupcakes I feel shy to even post these. I was very happy before baking these cupcakes but once they came out of the oven my heart sank to see the cracks and uneven top.

 

 

I felt they were unworthy of posting and was thinking to make cake balls out of them.

My daughter cheered my mood, “Mom, what are you saying? “They look fine. You take things, way to seriously, Cover it with your favorite whipped cream and post it”

What she said has a point. I was disheartened only by the look of it otherwise we totally enjoyed. They were perfectly moist and tasted just as a gluten free red cup cake should.

 

 

GLUTEN FREE RED VELVET CUPCAKES

Ingredients:

135 gm White rice flour mix ( little less than 1 cup)

85 gm white granulated sugar

1/4 cup butter at room temperature

1 tbsp cocoa powder for baking

1 tbsp red colour ( McCormick)

1 egg

1/2 tsp pure vanilla extract

1/2 cup buttermilk

1/2 tsp white vinegar

1/2 tsp baking soda

1/4 tsp salt

Frosting:

125 ml whipping cream

2 tbsp confectioner’s sugar( optional)

Method:

Preheat oven to 350 degrees F and line 6 muffin tins with cupcake liners. In a bowl sift gluten free flour, salt and cocoa powder. In a hand mixer beat the butter until soft. Add sugar and beat until light and fluffy. Add the egg and beat until incorporated. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined. Whisk buttermilk and red food coloring. Mixing with a spatula, alternately add the flour mixture and buttermilk to the butter mixture in three additions, beginning and ending with the flour. In a small bowl combine the vinegar and baking soda. Allow to fizz and then quickly fold into the cupcake batter. Working quickly divide the batter evenly among the 6 muffin cups and smooth the tops with a spatula. Bake in a preheated oven for 20 minutes or until a toothpick inserted comes out clean. Cool the cupcakes in their pans on a wire rack for 10 minutes and then remove from pan. Let cool completely before decorating with frosting.

Whipping cream Frosting:

In a bowl of hand blender fitted with a whisk, beat cream, smooth and thick enough to pipe. Add 2 tbsp of confectioner’s sugar and beat again just to mix.

    I too cannot get enough of Tina’s and Lizzy’s baking. They sure bring out lovely desserts. I have had my share of disaster when baking but am slowly learning from my mistakes. I tend to over beat the paste/dough most of the time which leads to the cakes cracking on top.

    You did a great job by frosting the cakes on top and that makes the cake looks good. Congrats on your 100th post Bel.

    I’m in no position to tell you what went wrong considering I’m at the lowest level of baking expertise at the moment and all that I made came out with a little bit of luck to it … that’s my belief πŸ™‚ Besides, I’ve never made anything with white rice flour mix before.
    Actually, I think they look very nice with the topping on and the inside looks perfect! A lovely color too!
