Just the mere word “Brownie” caught my daughter’s attention. She excitedly picked up a recipe card from a specialty store where I shop for gluten-free products.
“Mom, you have to make these brownies. They’re gluten-free, egg-free, and no-bake!” she said, beaming with excitement.
The recipe had some incredible ingredients, so I decided to give it a try. Luckily, I had everything on hand: medjool dates, walnuts, cocoa powder, coconut oil, and hemp seeds. It came together quickly and effortlessly—just the kind of wholesome treat I love making for my family.
These no-bake brownies are a healthier twist on the classic. They’re naturally sweetened with medjool dates, which are soft, chewy, and almost caramel-like in flavor. If you’ve never had medjool dates before, you’re in for a treat. They’re moist, rich, and naturally packed with fibre and essential minerals.
The addition of hemp seeds gives these brownies a super food boost. They’re a fantastic source of plant-based protein and omega-3 fats, and I often toss them into my smoothies or sprinkle them over breakfast bowls. (Speaking of which—don’t miss my [breakfast hemp smoothie] recipe!)
The walnuts provide a satisfying crunch and healthy fats, while the cocoa powder brings that deep, dark chocolate flavor we all crave. Coconut oil helps bind it all together while adding a subtle richness.

NO BAKE COCOA BROWNIES

Ingredients:
100 gm walnuts
25 gm almond meal or milk powder
50 gm cocoa
1/4 tsp pure vanilla extract
1 tbsp hemp seeds
1 tbsp desi ghee (clarified butter)
160 gm (12) medjool dates, pits removed
40 gm walnuts, chopped
Method:
Line a square pan (8″x8″) with aluminum foil with extra hanging off the sides so you can lift it out when the brownies are done.
Process walnuts in food processor until fine and crumbly.
Add the remaining ingredients except the dates and process for 30 seconds.
Now add the dates a couple at a time until mixture begins to look like a potting soil.
(The recipe says it sticks but my mixture does not look sticky at all.)
Scrape down the sides a few times to ensure that everything is mixing evenly. Remove blade from the jar and add chopped walnuts; stir with spatula. Transfer mixture to the prepared pan, distribute evenly and pat firmly into the pan with your clean hands. Place the brownies in fridge to set for 1 hour. Cut into squares and serve!
It’s good to store these brownies in fridge or in the coolest corner of your kitchen.

When I saw the No Bake, I was all trilled up. With the little baking skills I have, I am in need of easy to make desserts and this recipe is perfect. I too have many ingredients already at home because at times its difficult to buy small quantity. The cocoa powder and some are sitting in my pantry. Time to bring out to make this tempting brownies.

This does have some grand ingredients! Hemp seeds? Never saw that on a brownie recipe. Love that it’s no-bake (hello – hot summer) and like your replacements (my daughter won’t eat coconut anything). They look dark, rich and worth the calories!
