Scrambled Tofu and a weekend at Ocean springs

Over the long weekend we drove to Ocean Shores with three other families. Even though we live in a place where beach and mountains are very close but we get the urge to explore other places and get-away from home. So, ocean shores fit perfectly in our plan. It was a quiet and peaceful place and the resort where we stayed, was pet friendly. Our room was on third (the top) floor and it had an ocean view which was great for hearing the ocean waves and looking out at the sea. I experienced drastic change in the weather, when we left Richmond on Saturday it was 28° and at ocean shores it was cold and windy, which felt good and revived our tired spirits.
Next morning we went for a walk to enjoy the tranquility of the ocean. It was low tide and we walked bare feet as deep as possible on the soft wet sand. There was mist in the air. People seemed digging clams and sea shells on the beach ( I did not see closely but  their plastic bags were full and heavy). The sky was overcast but still we decided to spend the whole day on beach. The place was captivating with wide open stretches of beautiful beach. Some of us went for horse ride and others drove mopeds. We tried to play Frisbee on the beach, but the wind made it difficult to throw where we were actually aiming. Kids had fun building sand castles, flying kites and burying each other in sand. There were some people surfing in the ocean. The prevailing fresh ocean breeze, gently sloping sand and waves also awoke the child in us and we had wonderful time chasing the waves.
Eating gluten free outside the home needs planning. I always carry some food and do research before going anywhere but I would have survived even if I have not brought anything. There was a full kitchen with our room hence I made my own breakfast. Lunch was mainly tandoori chicken with bunch of fire roasted potatoes, salad, chips and fruit. My husband marinated the chicken a night before and cooked at the beach on portable BBQ. It seriously tasted better and was fun sharing and eating together in open. By about late afternoon the tides became high and started reaching quite a bit in the beach and we have to remove our BBQ more far.
At night we ate at one of the hotel. The thing about ocean shores is that you can drive on the beach, which was cool and fun for my daughter, who recently got her driving license. I feared that our truck might get stuck in the sand because there were loose sand in some areas but my husband who knew the ins and outs of beach driving said that if his Acura MDX get stuck he will return the truck to the dealer. I personally did not like the idea of driving on the beach but thankfully people were sensible enough to see where and when to drive. It was  a different experience than other beaches. Next day on the way back home we stopped at Pizzeria La Gitana as I knew they sell gluten free pizza, which was baked in wood fired oven.

 

After a nice relaxing trip I didn’t want to cook but we need to put some fuel, so I made this easy scrambled tofu to make some sandwiches for dinner. Scrambled tofu is an easy substitute to scrambled egg, low on carbs and rich in vegan protein. The dish is hearty and satisfying and quick to prepare whose beauty lies in its simplicity. It goes well with chapati, and filling for wraps or sandwiches.

 

SCRAMBLED TOFU

serves: 3

Ingredients:

454g(1 lb) medium firm or firm tofu

1 tomato, chopped

Small onion, chopped

1/3 cup thawed peas

1 tsp cumin

1 tbsp ginger, finely chopped

1/2 tsp turmeric

1/2 tsp red chili powder

salt to taste

1 tbsp olive oil

Method:

  1. Drain any water from the tofu by pressing it between paper towels, placing something on top. Roughly break tofu into pieces.
  2. Heat oil in a frying pan on medium high heat, add cumin. Once it crackles add onion and ginger. Cook until fragrant and light brown.
  3. Add tomato, peas and green chili and continue cooking until they soften.
  4. Add turmeric, red chili powder and tofu. Cook stirring constantly until the tofu breaks up and resembles scrambled eggs.
  5. Stir in salt. Serve with chapattis or make sandwiches.

    I love scrambled tofu and this is a delicious way to prepare them. I usually use italian spices but I am going to try it with these, cumin, ginger and turmeric sound wonderful. Sounds like you had a really relaxing vacation, love the photos. Happy weekend to you.

    Love the beach photos, Balvinder. You ladies look so happy and relaxed. My daughter cooks vegetarian/vegan at least 3 times a week, and she uses tofu a lot of different ways. I, of course share most of her light meals, and I will certainly recommend to her your delicious scrambled tofu, which looks so inviting with the yummy spices:) xo
