Snap Pea Soup With Mint & Garam Masala

Today’s post is short and sweet as I am taking it easy these days by hanging out with our daughter who finally got break after summer school and Provincial exam. I was thinking about making vegetable soup ever since I tasted butternut squash soup at Seasons. And, last weekend when I was busy preparing dishes for the dinner party I made this soup for a light lunch. Sweet, spiced, creamy and delicious! This is fairly a simple soup, which is fast to cook and fills you up in a satisfying way.

 

This soup has some delicious elements like ginger, garam masala and mint which balance out the sweetness of peas. Without spices and in conjunction with lemon juice it would not have tasted better. You can throw in some lettuce, spinach, spring onion or frozen peas for more flavor and green color.

This can be served cold, warm or hot with a crusty bread and that is exactly what I like about it. I served my soup warm, with Quejos brazilian buns. These buns are wheat, gluten and yeast free.

 

SNAP PEA SOUP WITH MINT AND GARAM MASALA (serves 4)
Ingredients:
800 gm tender snap or snow peas
45gm shallot, chopped
1″ piece ginger, chopped
1.5 tsp pepper corn
4 cups chicken stock or water and more
1 tsp garam masala, more if you like
2 tbsp lemon juice
3-4 tbsp mint leaves, chopped
salt as per taste
1 tbsp butter +1 tbsp olive oil
yogurt or sour cream for serving

Method:
1. With a small sharp knife trim ends of snow peas and remove the thin string from both sides.

2. In a saucepan heat butter and oil over medium heat. Add chopped ginger and shallot, saute stirring occasionally for 1 minute. Add snow peas, chicken stock, salt and black pepper corn.

3. Bring it to boil, place lid over saucepan and simmer until snow peas are soft or for about 10 minutes.

4. Add mint leaves, garam masala and lemon juice. Using a food processor or blender, puree mixture until there are no lumps.

5. Strain the pureed mixture through a sieve to remove all the fibrous part of snap peas.

6. Ladle soup in a bowl topping it with yogurt or sour cream and serve it with Quejos buns.

    I used to drink snap pea soup once a week while working and I really enjoyed it. My husband is not a fan and I doubt my kids would like, so I never get to enjoy it at home. Garam masala and mint sounds like a nice addition. Looks yum!

    We are having veggie soup and cheese sticks for dinner tonight. It makes a nice hearty dinner. never tried garam Marsala to soup, will sure try this addition.
