No bake Mango Brûlée

The weather is getting wonderfully pleasant. The air smells cleaner, fresher, healthier and the trees are in full bloom throughout the lower mainland. I’m ready for some sunshine and warm days ahead.  To celebrate, I thought I would share an easy and delicious recipe that uses mango. Spring and Summer is prime mango-eating season all over the world so you have no excuse not to make this delicious dessert for yourself.

In the photos I have used leftover sugar pouches that came with Marie Morin Crème brûlée from Costco.

 

Creme brulee is a classic French dessert consisting of a custard topped with caramelized sugar. The custard for creme brulee is traditionally made with cream, egg yolks and sugar. As the title of my recipe says this creme brulee is no bake so there are no eggs to add structure but it has dairy to make the creamy base. And, in this case it has two – thick yogurt and mascarpone cheese.

Thick yogurt or yogurt cheese or hung yogurt is a yogurt that has some or all whey drained out from it. You can check one of my earlier posted recipe to make thick yogurt.   For this recipe I used 1 cup thick yogurt, which was strained for 24 hours from 4 cups of homemade yogurt. Using fat-free yogurt, instead of traditionally heavy cream (or whipped cream) cuts down on the overall fat and adds a little protein to this fabulous dessert. I usually make yogurt with 1 % milk so after 24 hours you will have three cups water (whey) in the bowl and 1 cup of thick yogurt in the muslin cloth. Hung yogurt looks, tastes, and behaves like cream cheese. It can be used in quick dessert with seasonal fruits, ice cream, dips, or curries.

This no bake mango brulee recipe is super easy to make and deliciously indulgent. Fresh chopped mangoes are layered with soft, sweet creamy mascarpone and yogurt custard in ramekins, which are chilled, topped with sugar and then caramelized with the help of a kitchen torch. Although, a kitchen torch produces best results to caramelize the sugar, if you don’t have one I’m also sharing how to broil it in the oven.

No bake Mango Brûlée

Prep Time: 2 hours, 15 minutes

Total Time: 2 hours, 15 minutes

Ingredients

  • 2 manila or 3 ataulfo mangoes
  • 1 cup mascarpone cheese*
  • 1 cup thick yogurt ( 4 cups yogurt drained for 24 hours)
  • 1 tsp fresh ground ginger
  • 2 tbsp powdered turbinado sugar
  • 4 tbsp turbinado sugar/superfine sugar/brown sugar
  • Zest of one lemon

Instructions

  1. Slice the mangoes on either side of the seed. Discard the pit and peel the fruit. Slice and then chop the fruit and divide (3 tbsp) it among 4 (9x4cm) ramekins.
  2. Beat the mascarpone cheese with the yogurt. Fold in remaining chopped mango (about 1/2 cup), ginger and ground turbinado sugar.
  3. Divide the mixture among the ramekins and level off the tops. Cover with plastic wrap and refrigerate at least for 2 hours.
  4. To brulee, sprinkle a thin even layer of sugar over the top of each dish, covering the creamy mixture. Holding a hand-held torch 4 inches from the sugar, lightly brown the sugar using a slow even motion.
  5. Then either broil or use a blow-torch to achieve a delicious caramelized effect. If you don't have the torch set the ramekins on a baking sheet under the oven broiler (500°F) for about 1 minute, constantly checking it and rotating the pan so that all of them are evenly bruleed.
  6. Let the burnt sugar topping set for a few minutes before serving. 

Notes

*Instead of mascarpone cheese you can also use 1/2 and 1/2 mixture of whipped cream and cream cheese.

I like to use turbinado sugar because it is lighter in color with subtle molasses flavor.Its crystals are larger, so I like to grind it up a bit in a coffee grinder. If you do not have this sugar, no big deal you can use regular white sugar.

    Our weather here is opposite, burning with heat and real killer. However finding mangoes are still pretty easy and in fact, so many varieties we get over here.

    I like the eggless version and yes with mascopone and yoghurt, being my fav ingredients too. Gorgeous looking esp the darkish brown top.
