Crunchy Celery Salad with Oil and Sugar-Free Grape Vinaigrette

This Crunchy Celery Salad tossed in oil and sugar-free grape vinaigrette is loaded with goodness in every bite.  Thanks to high fiber and low calorie celery, cranberries, herbs, tahini, and lemon zest. This salad makes an excellent side dish or even pack in a mason jar or container to take for lunch on the go!

We eat a lot of salads in our house and I’m always looking for new combinations that use common ingredients and are appealing.  I got the inspiration for this salad a few years ago from a foodie friend of mine (not a food blogger) who made this for one of our luncheons. It was so good I couldn’t stop eating it! But when I recreated her salad at home, I changed a few things. I wanted my salad to be on the greener side, so I substituted dates with green grapes, hot green chili for red pepper flakes and added fresh herbs for flavor. The result was so tasty that I have since then made this Celery Salad so many times.

 

 

What I love about this salad is how easily it comes together, and you can make it ahead of time and even toss it with the vinaigrette. So, it’s ready to pop out of the refrigerator when you’re ready to serve. Not only is this an excellent side dish but it’s great for lunch too. I almost always serve this on top of Socca.

Celery Salad with Oil & Sugar-free Grape vinaigrette

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 3-4 servings

Simple yet irresistibly delicious, this minimalist salad makes a great refreshing side or snack.

Ingredients

    Salad
  • half bunch (about 6 stalks) celery, inner leaves included, rinsed
  • zest from 1 lemon
  • 2 tbsp cranberries
  • salt to taste
  • 1/3 cup mint, chopped
  • 1/3 cup flat parsley, chopped
  • Oil and sugar-free Green Grape Vinaigrette
  • 9-10 sweet green grapes
  • 2-3 tbsp tahini
  • 3 tbsp lemon juice
  • 1 hot green chili
  • salt and black pepper to taste

Instructions

  1. With a sharp knife, thinly slice celery stalks at a slight diagonal angle (approx 4 cups).
  2. To make the vinaigrette, puree grapes and green chilli with lemon juice, in a blender. Add tahini and blend again.
  3. Combine celery, lemon zest, salt, black pepper, parsley, mint in a medium bowl.
  4. Just before serving, add vinaigrette; toss to coat.
  5. Sprinkle with cranberries.

    I love movies as well , Bal ! I lean towards sci-fi / fantasy / action but never horror films 😀 Will check that Queen . I seldom eat much less make vegetable salad , need to change that now that I’m old lol Love this simple and refreshing salad , the grape vinaigrette sounds delicious on its own .

      I like movies with good storyline, with a positive or uplifting message…romantic films like ‘Notebook’ and Amour’ and comedy films,…and also thrillers….I hate horror movies. Years ago I saw Evil Dead and could not go alone in the dark for days. Old? you… no.. Don’t call yourself old, you have such a good sense of humor, love reading comments, and posts 🙂

    Celery is something I never buy, but I’m tempted now as I’ve read how incredibly good it is for one. Never heard of socca or besan. Hey, what language are you speaking? LOL

      Now I am surprised at your comment. You know I use BESAN a lot. You should check my chickpea flours page to know what besan is….And Socaa..it is Italian Flat bread (pancake) prepared from garbanzo bean flour. Glad you like the salad and will now buy celery.

      I am not a huge fan of raw celery, but the creamy grape vinaigrette with a kick makes all the difference.

    I have always loved celery, but members of my family don’t enjoy it as much as I do. Consequently I don’t do all that much with it. I am definitely going to make this salad. What a wonderful combination of ingredients. It sounds delicious!

    Oh my gosh, I LOVE celery. I craved it when I was expecting my second son. I would eat entire stalks at a time, I’m not talking ribs, I am talking stalks. I still like it, so I must make this salad. It sounds delicious.
