Strawberry And Chocolate Chip Scones

I woke up this morning with an itch to bake. A sweet smell of chocolate was lingering in my house from last night’s chocolate fondue party. There was no special occasion, no plans I don’t even have a fondue pot, but my daughter had her friends over, for an evening of chocolate fondue.

Every weekend my daughter and some of her friends, go for a run. Last evening they decided to hang out at a fondue place after the run. Sadly, they did not get the reservation, the place was fully booked for the evening. Since this place is one block away from our house my daughter asked if everyone can come over to their house. Before I could think or say anything, she pleaded on the phone, “Mom Please… please.. please, I promise there won’t be any mess”. “We will do everything …we’ll buy the fruits …. and don’t worry about the cleanup…..Thank you..thank you. You are too good, mom”.  I was not going to refuse at first place, her friends come over all the time, they are quite responsible, I love to have them around in my house. This was so sudden that she  did not give me time to wind up the giant mess I have these days from a decorating project, I am  working on for their school.

With in hour the  girls bought the fruit, diced and melted chocolate in a regular pot. I was too busy to take any picture or see what they were doing but here is one picture ( from one of  my daughter’s friend).

 

 

I do not wanted to bake anything complicated. Who has  time in the morning?

Hence, I could only think of scones at that moment. Scones are easy and quick to make, and they’re extremely delicious when eaten warm with tea, milk or coffee. Which is why we love to have them for breakfast. I always bake in the morning, but on those days I keep the dry ingredients ready at night and leave in the fridge. This helps to save time  and keep the rubbed butter nice and cold for flakier scones. Then, the following  morning, I just have to add the wet ingredients, pat, cut and pop in the oven.

 

 

This is a great recipe of scone with a delicious combination of strawberries and chocolate chips. What sets it apart is that I  have also added rolled oats to get that extra wonderful texture and a nuttier flavor. They are the best the same day they are baked with clotted cream (if you can find some), and frothy beaten coffee (if you can make some in the morning), then you’ll be in heaven.  If there are any leftover store them in container wrapped in foil. They will still be great the following day when reheated in oven.

Strawberry And Chocolate Chip Scones

Prep Time: 10 minutes

Cook Time: 18 minutes

Total Time: 28 minutes

Yield: 8 scones

Ingredients

  • 1 cup (95 g) old fashioned rolled oats, plus more for topping
  • 1 1/2 cup (205 g) Gf all purpose flour
  • 1/4 cup (50 g) white granulated sugar
  • 150 ml cream, chilled (more if required)
  • 1 egg
  • 6 tbsp butter, chilled, cut into small pieces
  • 1 tsp vanilla
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup strawberries, cut into bite size pieces
  • 1/3 cup semi sweet chocolate chips
  • 1 egg beaten with 2 tsp water or 2 tbsp cream for brushing
  • turbinado sugar for toppping

Instructions

  1. Preheat oven to 425° f. Line a baking sheet with silpat or parchment paper.
  2. Sift the flour, salt and baking powder in a medium bowl. Add sugar and oats.
  3. Cut in butter with pastry cutter or fork.
  4. Beat cream, vanilla essence and egg in a small bowl. Stir into flour mixture until it starts coming together.
  5. Add the strawberries and chocolate chips, stir just until combined.
  6. Turn out the dough onto a lightly floured surface or the prepared baking sheet. Shape dough into a 7" round about 1" thick.
  7. Cut into 8 wedges, then pull them apart and put them on the prepared sheet with 2 cm space in between each scone.
  8. Brush with cream or egg wash. Sprinkle with oats and turbinado sugar.
  9. Bake until scones are golden and firm, about 20 minutes.
  10. Serve with tea, milk or coffee (whatever you like).

    I too used to allow my daughter’s friends into the house. I rather them hang out in my house than outside and worrying about what they will be up to. This is a fabulous scone recipe. I read through the ingredients and how to make it. Sounds quite simple without any heavy baking skills. Would love to try out but may have to leave out berries. I am thinking of an Asian fruit which is easier to come and cheaper in price for me.

    Come to think of it I’ve never had strawberries in scones before. I LOVE IT! I was debating if I should buy a scone pan in the kitchen store the other day, but I guess I can make without one, just like how you beautifully made them! Thanks for the idea of fondu party.
