Mascarpone Peach Melba

As the weather begins to cool and the summer fruit disappears, I’ve been savoring the last final peaches from our tree. Peaches are no different from mangoes. Both come in beautifully golden red forms, sweet and juicy with yellow or white colored flesh, and tastes like summer. Most times I enjoy eating a peach out of hand just like mango, juice dripping down my chin as I bite into it. It’s probably one of life’s few simple pleasures. Beyond that, peaches are simply wonderful baked in cakes and cobblers. I also enjoy them grilled with a morning toast and in chutney, salsa, fruit salad and not to forget in this cool and refreshing summertime treat called Peach Melba.

 

 

This delightful dish was created by famous french chef Georges Auguste Escoffier, in honor of Australian opera singer Nellie Melba, who this dish is named after. The original peach Melba recipe is believed to have been poached, skinned, sliced, and cooled before being sprinkled with sugar. This was then placed onto vanilla ice cream and then drizzled with a sweet, seedless raspberry sauce. Here, I have a slightly altered but equally delightful recipe of peach Melba with mascarpone cheese and hung yogurt. The peaches in my recipe are blanched (well you can soften them if you wish) and then added to fresh raspberry puree.

Mascarpone Peach Melba

Prep Time: 30 minutes

Cook Time: 5 minutes

Total Time: 35 minutes

Yield: 6-7

Soft mascarpone cream cheese topped with tender slices of peaches, pureed raspberries and toasted almonds.

Ingredients

  • 5 ripe peaches
  • 400 fresh or frozen raspberries
  • 2 tbsp freshly squeezed orange juice
  • zest of one orange
  • 2 tbsp grand marnier, or other orange flavored liqueur
  • 3 tbsp granulated white sugar
  • 1 1/4 cup mascarpone cheese
  • 1 cup hung yogurt
  • 1/2 cup icing sugar
  • honey roasted or plain toasted sliced almonds to garnish

Instructions

  1. Place raspberries in the bowl of a food processor or blender, blend until pureed.
  2. Then press through a fine non metallic strainer into a mixing bowl to remove the seeds.
  3. Transfer to a bowl, add orange juice, zest and liqueur and sugar. Cover and let chill in the refrigerator until required.
  4. Meanwhile, blanch the peaches for 20-30 seconds and place them in iced water for few seconds. Peel them and cut into 2 halves, remove the pits and cut each half into 4 and stir into the raspberry puree. Cover and put it back in the refrigerator until required.
  5. In a medium size bowl, combine the mascarpone, yogurt and sugar. Using a hand whisk or an electric mixer, beat until smooth. Chill.
  6. When ready to serve, put spoonful of mascarpone mixture among serving glasses or bowls.
  7. Top with peaches and spoon some extra sauce over.
  8. Sprinkle toasted almonds just before serving.

    Refreshing peaches, sweet raspberries and hint orange flavour it’s delish dessert.. a similar one I make with cream cheese but without orange flavour.. I like the addition of hung curd, will try next time.
