Sensational Sweet And Spicy Salmon

As the days get shorter and darker in Vancouver one can not get enough Vitamin D from sunlight. Therefore, it is important to get vitamin D from our food.  Foods like fatty fishes, egg yolk, mushrooms, spinach and soybeans are a great source of vitamin D.  My favorite way to get sunshine vitamin is from salmon. Loaded with omega 3’s fatty acids, protein and a variety of nutrients, salmon is  one of the incredibly delicious fish that can take some bold flavors and spices. No matter what cooking method or ingredients you choose it always satisfies your taste buds.

This baked salmon recipe is very simple  to make with no special ingredients. You probably have them all in your pantry right now. I used taste of home’s recipe as a guide to make a dry spice mix of brown sugar, salt, red chili powder, cumin and black pepper. The spice mix creates a nice balance of flavors that works great on rich and moist salmon.

 

 

You can make the spice mix ahead of time, and store in a jar or ziploc bag until needed. It’s super versatile and keeps for a while. I usually  double the spice mix recipe, for last minute dinner emergencies.

 

 

This is a whole salmon fillet from Costco. You can leave it whole while baking or cut it in portions before putting on the spice mix. I like to bake large portions of salmon and keep the leftovers in the fridge or freezer to be used later in the week. It is perfect served with steamed or oven roasted vegetables or rice.

Sensational Sweet And Spicy Salmon

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 5-6 servings

A simple and delicious way to make fresh flavorful salmon.

Ingredients

  • 1 whole salmon fillet- approx 1.30 kg, skin on or skin off
  • 3 tbsp brown sugar
  • 1 1/4 tsp salt
  • 3/4 tbsp red chili powder
  • 3/4 tbsp cumin, coarsely ground
  • 1 tsp freshly ground black pepper
  • 2 tbsp lemon juice
  • zest from half lemon

Instructions

  1. Wash salmon filet and pat dry. Rub lemon juice and salt, leave aside for 10 minutes.
  2. Preheat oven to 450 degrees F. Line baking sheet with aluminum foil. Spray with oil.
  3. Combine brown sugar, ground cumin, salt, red chili powder, lemon zest and freshly ground black pepper in a bowl.
  4. Place salmon on prepared baking sheet with skin down.
  5. Rub spice mix over salmon.
  6. Bake uncovered, for 15-20 minutes or until fish flakes easily with a fork.
  7. Serve with your choice of vegetables.
