Paneer Oat Pancakes with Lavender Berry Compote and (blogiversary)

Hellloooo everyone!

Guess what today is, it’s my 6 year blogiversary… Yeah. I’ve been at this for a long time and I feel like I say it every year but I’m always surprised that I haven’t gotten tired of it yet.  No matter how busy I am, I always find time for my blog. My food blog is a space that I truly enjoy and find peace and comfort. I am not a huge blogger so I love the people who read my blog. I am forever grateful to you all! Thank you all very much from the bottom of my heart!

Now let’s kick start the day with a good breakfast!

 

 

I’ve always been a morning person so I love breakfast. For me it really is an important meal and I would never skip it. I was brought up in a family that believes in breakfast and eating together at family meals.  Following in my mother’s footsteps, I am intent on extending love by cooking breakfast for my family even if it requires me to wake up early, as some days my husband and daughter leaves by 7:00AM.  Feeding my daughter and husband before they leave the house for the day gives me great joy. And, the satisfaction on their faces inspires me to prepare breakfast every day. I believe such traditions should be passed down to our children. They will always remember the breakfasts that their mom cooked and hopefully they will do it for their children!

 

 

The following pancake recipe is for those who want their breakfast to be high in protein and low in sugar. These pancakes are everything they should be -satisfying, healthy, nutritious and completely delicious! I have always made oat pancakes with ricotta, but last week I used paneer as I didn’t get the gluten free ricotta that I normally buy. They ended up basically just like ricotta pancakes but much more sturdier. We all loved it and I made them again to share the recipe with you all. This recipe is very forgiving if you add a  little too much flour and find the batter too thick; just stir in a little more milk to thin it out.

I served these pancakes with berry compote for extra deliciousness. You could certainly serve them with whatever you’d like – jam, coulis, marmalade, maple syrup, honey but I recommend serving them with my no sugar lavender berry compote. It’s so good.  I love lavender for its perfume and color. It adds the herbal complement to this compote, but if you are not a fan, you can totally omit this and use vanilla instead.

Paneer Oat pancakes with Lavender Berry Compote

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 7-8 pancakes

These pancakes are fiber and protein rich and have a little more body than ricotta pancakes, thanks to the Indian cottage cheese.

Ingredients

  • 1 1/2 cup oat flour
  • 1 1/2 cup grated paneer
  • 2 tsp baking powder
  • 1 tbsp. maple syrup
  • 4 eggs
  • 1/2 cup milk
  • 2 tbsp. oil
  • To serve
  • No sugar lavender berry compote

Instructions

  1. Put oat flour, grated paneer, baking powder into a bowl and mix.
  2. Make a well in the center of your bowl, add in eggs, maple syrup, milk and oil, stir.
  3. Keep stirring until you have a smooth thick batter.
  4. Heat a lightly greased pan or electric grill over low heat.
  5. Using a ladle, drop batter onto the hot pan/ grill. Cook approximately for 2 minutes until the underside is golden and then flip to the other side and cook for another 2-3 minutes, until golden. Repeat with remaining batter until batter is used up.
  6. Serve warm with berry compote.
  7. To make no sugar lavender berry compote follow my recipe and add 2 tbsp. fresh lavender flowers or 1 tbsp. dried lavender flowers.

    Im not a morning person but I do love pancakes and do sometimes make them at the weekend when a later breakfast is the order of the day. I tend to stick to the same basic recipe but I am really interested to try these. Ive not heard of adding paneer before.
