Chili Lime Baked Salmon

Hi everybody,

This is going to be a very short post. I am on vacation for few days, but I do want to make sure I get a food post out on Tuesday.

Salmon is one of our go to fish choices for weeknight dinner. It’s healthy, versatile and tastes great whether it’s baked, pan-fried, or grilled or used in rice, pasta or patties. Today’s salmon recipe is simple and delicious. When I say simple, I really mean SIMPLE.

 

 

This simple approach only requires a handful of ingredients but the result is delectable. And the bonus is less cleanup because you are cooking the fish in a foil boat. I used chili, lime, honey and cumin for marination which truly enhances the natural, delicious flavor of the salmon. This particular marinade is great on lots of different fish, but salmon will always be my favorite. I simply laid a whole salmon fillet (preferably wild sockeye) on  foil lined baking sheet. Then I brushed the marinade on top. But before that I poked holes in the fish to help the marinade penetrate inside. I cooked the fish for 10 minutes in foil and then broiled for 2-3 minutes. This is a flavorful way of making salmon.  It only takes about 20 minutes to make and you are set.

This goes beautifully with roasted vegetables and you have a very healthy low carb dinner in no time. Perfect for the rainy autumn nights ahead. Enjoy! If you make it, be sure to share your photo with me through Facebook, Instagram or Twitter.

Chili Lime Baked Salmon

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients

  • 600 gm salmon fillet (I would recommend wild sockeye salmon because of its vibrant red orange color)
  • Zest of one lime
  • 2 tsp chopped cilantro for garnish
  • Marinade
  • 2 tbsp. lime juice
  • 2 tbsp. honey
  • 1 or 2 (depending on the heat) red hot chili pepper
  • Salt to taste
  • 1/2 tsp cumin seeds

Instructions

  1. Preheat oven to 375
  2. Blend the marinade ingredients in a blender.
  3. Line your baking sheet with foil and place the fish on
  4. Poke holes in salmon with toothpick.
  5. Pull sides of foil up around salmon, creating a boat.
  6. Brush the chili lime marinade over. Sprinkle lime zest.
  7. Wrap the foil so all sides are properly closed so the marinade does not leak.
  8. Bake in preheated oven for 12-15 minutes (the size and thickness of the fish will determine how long to bake).
  9. Open the foil, spoon the marinade surrounding the salmon onto the fish, place under the broiler on for the 1-3 minutes.
  10. Serve garnished with cilantro.

    I do love fish in general but have definitely got soft spot for salmon which is on our menu pretty much every week. I love how meaty and substantial it is and that there are so many fantastic ways to prepare it. I really like the sound of your lovely marinade and your quick bake/broil method. I will be making it!
