My evening tea has to have some sort of snack; usually it is baked or else it feels incomplete. This is a habit that was formed way back when I was in college. As store-bought gluten free goodies never appeal to me because of their higher starch content I bake them at home with my own blend of flours. This time I went with savory crackers. I have baked these crackers a handful of times using different seasoning and herbs and they always come out delicious.
I shared this recipe with you almost 9 years ago and you guys loved it and here I am again and thought it’s perfect to reshare this with you with some updated pictures and a slight change in the ingredients. In my earlier post I talked about kitchen disasters that’s why some of the readers have shared their kitchen disasters in the comments.
These crackers are quite easy to make and bake. I mixed millet, oats, and brown rice flour, added some spices and herbs and made into a nice ball of dough. You can customize your crackers by choosing your favorite herbs and spices. Then roll out the dough between two sheets of parchment paper lightly dusted with flour. Cut them in rectangular shapes or however you want. Poke a few holes in each cracker with a fork so they don’t puff up in the oven. Bake for about 15-20 minutes or so, or until they are just starting to brown.
These crackers are vegan besides being gluten free, and they are great portable snack. They taste pretty good without anything on side, but you can eat them with yogurt cucumber dip (vegans can use vegan dairy free yogurt here).
Crisp vegan crackers for healthy snacking.
Ingredients
- 1/2 cup brown rice flour
- 1/2 cup oat flour
- 1/2 cup millet flour
- 1 tbsp white sesame seeds
- 1/8 tsp garlic powder (optional)
- 1/8 tsp black pepper
- 1/4 tsp baking powder
- 1/4 cup chopped basil and rosemary or t tbsp dry herbs
- 1 tbsp chia seeds or 1/3 cup ground flax seeds
- 1/4 cup water
- 2 tbsp olive oil
- 1/2 cup Greek or homemade hung yogurt (use dairy free yogurt for vegan option)
- 3" cucumber, chopped
- 1 garlic clove, finely chopped
- few leaves of cilantro or mint, finely chopped (optional)
Instructions
- Soak chia seeds in 1/4 cup water for 20 minutes.
- Pre-heat the oven to 350°F.
- Combine flour, baking powder, salt, garlic powder, black pepper and herbs in a bowl. Stir.
- Add olive oil, and chia seed gel. Mix until a dough forms. Add a bit more water as needed to get a workable dough.
- On a lightly floured parchment paper, roll out the dough about 1/8 inch thick and as even as possible. [I used silpat at the bottom (no need to dust with flour) and cling wrap on top]
- Then use a pizza cutter or knife to cut individual crackers in squares or rectangles. Poke each cracker a few times with a fork.
- Carefully pull the silpat or parchment paper onto a cookie tray. Bake until they are firm and crisp for about 15 -20 minutes. Timing will depend on how thin your crackers are, thicker crackers may take a little longer.
- Cool and move to an airtight container for storage.They're delicious with homemade yogurt dip.
- To make yogurt cucumber dip+ take yogurt in a small bowl.
- Add in cucumber, garlic and herbs.
- Season with salt and pepper and mix.
- Enjoy with vegan crackers.

My kitchen disaster occurred when I baked bubble rolls (rolls with gooey caramel)in an angel food cake pan instead of a closed tube pan. The caramel dripped to the bottom of the oven, then caught on fire when I turned on the self cleaner, and then the smoke detector called the FIRE DEPT!!!! With sirens blaring a huge fire truck appeared in front of our house…and I had to tell the cute firemen that I was just cooking! :/
