Spaghetti with Grilled Ratatouille

We are having some real nice weather. People are flocking to beaches and camping to take advantage of the well deserved sunshine. And those who are not lucky enough to take some time out, pitch up their tent in backyard and feel like a camper. My husband and I love camping, but we were not raised in that lifestyle, so are not bitten by the camping bug, as my daughter is. In India camping was thought to be only for hikers and trekkers, though family camping is now slowly picking up.

Camp was a huge part of my daughter’s childhood and early teen, she was a girl scout for 5 years and spent every summer holiday in day camps. As a kid she would drape bedsheets over dining table to make a tent. So its not a surprise for us when she still has the same carefree mindset to have fun. Every summer she camp in our backyard with her friends or when my nephew comes over. I was not allowed to post any picture of camping because last year I posted one and she was not very happy about it. Things like rope course, canoeing, swimming that you can do during camping are not possible in home but we all get in the adventurous mood when she plan some activities in the nearby park for family and close friends. Kids enjoy water fight, adults play badminton, volleyball or some of them go for a walk on the near by river road. In the evening we all enjoy camping food, exercise our brains telling riddles and jokes late till night.  Then, all adults sleep in the family room on air mattresses and kids get to sleep in the tent.

Spaghettiwith ratatouille

The gluten free spaghetti dish with grilled ratatouille, that I am sharing with you today is a joint effort of my husband and daughter, which they made on our home camping adventure.

If you are new to my blog I should tell you that my husband loves to cook in his own style on special occasions. Well, he just makes the day special when he cooks. When I posted his vegetable stuffed omelet you might not have noticed that he added two different herbs and makes the best use of every vegetable he finds in the fridge. This time again he created a delicious satisfying spaghetti dish using vegetables and fresh herbs growing in my garden.

This is one of those easy recipes which you would love to make when company is coming over for barbecue.

SPAGHETTI WITH GRILLED RATATOUILLE (serves 3)
adapted from fine cooking magazine ( June 2011)
Ingredients:
1(225g) japanese eggplant
1(320g) zucchini
3/4 green pepper
3/4 orange pepper
3/4 yellow pepper
1 plum tomato
1/2 (medium) purple onion
1/2 head of garlic
1 cup good quality pasta sauce
1/3 cup fresh basil, chopped
8 oz (226 g) gluten free spaghetti
few pieces of cheese ( halloumi or paneer) or vegans can use tofu
4 tbsp olive oil
1 fresh bay leaf (optional)
2 tsp fresh thyme,chopped
1.5 tsp fresh rosemary, chopped
1.5 tsp fresh oregano, chopped
salt and freshly ground black pepper
Method:
1. Wash and cut the vegetables in 1/4 ” -1/2″ thicks rounds or squares. In a large bowl toss the vegetbales and cheese or tofu  with 3 tbsp olive oil, chopped fresh herbs ( thyme, oregano, rosemary and bay leaf) and a genrous sprinkling of salt and pepper.

2. Bring sufficient amount of salted water to a boil for gluten free spaghetti. Cook 1 minute less as instructed on box. Reserve 1/4 cup of water, drain the pasta and return it to the pot.

3. Light up your grill (or heat a ridged pan if doing in home). Place the vegetables on the grill (ridged pan) in single layer. Grill the vegetables, cheese and garlic head, turning once, until grill marked and tender.

4. Slip the garlic cloves out of their skin and crush with the flat of a knife. Add to the spaghetti pot along with jarred pasta sauce and the reaminng 1 tbsp olive oil. Cook on low heat until bubbly for 1 minute.

5. Roughly chop the vegetbales and cheese. Reserve the cheese and add vegetbales to the sapghetti. Cook for another minute or so.

7. Divide the pasta among serving plates, top it with pieces of grilled cheese and serve.

    Lucky you Bal for having two great people in your life, all the more who also enjoy cooking. Our weather here is still killer, hot and humid, so we don’t do much outdoor activity.

    We’re going to be camping next month. Can anyone give me tips on things you would normally forget to pack so I’m well prepared. There’s going to be water parks, and rides, plus the traditional camping stuff like fishing. We’re going to be staying in tents, not a cabin or RV so we won’t be needing any kitchen stuff I don’t think. Any ideas would be great, thanks!

      You, folks, are camping people you are much more equipped than people who camp at home.

      Anyways, my suggestion to you is that even If you are staying in tents you will still be needing kitchen stuff. What are you going to eat?

      Don’t forget garbage bags, buck knives and pepper spray ( if you are staying in deep woods).

    I’m not always a fan of ratatouille, but it’s a texture issue for me. I think grilled it rather than sauteeing will make all the difference. Great idea!
