Cucumber Sandwiches With Pepitas And Chipotle

There is a parent advisory committee (PAC) in all schools and I actively involve myself with my daughter’s school PAC since she was a elementary school kid. Each year every school’s PAC hosts a teacher’s appreciation week right before the school year comes to an end. It is a way to thank and honor all staff, who educate and inspire our children. Last Thursday, was the teacher’s appreciation breakfast in my daughter’s school so I volunteered to bring cucumber sandwiches.

 

 

 

Once I was there at the school I noticed that many other people had brought a lot of food as well, so my cucumber sandwiches seemed small compare to everything else. But soon enough a couple of teachers came and picked up a sandwich. I watched their expressions as they took a bite, and to my sweet surprise they looked at each other and nodded, I even overheard them say,

“They are pretty good.”

The other one smiled and nodded her head, “Yeah“

“I like the crunch in them “.

All teachers enjoyed the sandwiches with other foods of their choice. Some of them even thanked me when they came to know, I had made them, and a few even took a second helping and asked what I added in the cucumber sandwiches. I had no idea that such simple sandwiches could taste so good and liked by the teachers.

 

 

Cucumber sandwiches are the quick, easy, inexpensive and classic dish for a large group of people or for afternoon snack. At some point everyone would have made these for their kids, I did too. What makes these sandwiches a little distinctive from others is that I add a bit more to that taste by adding smoky cilantro chipotle dip from Panago,  ground mustard seeds and pepitas. When I don’t have the dip I add a little bit of chipotle seasoning. Its totally up to you how much you want to add the seasoning but keep it light though to let people guess what is in it.

 

 

 

CUCUMBER SANDWICHES WITH PEPITAS AND CHIPOTLE

Ingredients:

4 gluten free multi grain bread slices *

1 tbsp butter

1 tbsp cream cheese

1 tbsp mayonnaise

1/4-1/2 tsp mustard seeds, ground (or mustard paste)

a pinch of garlic powder

2 dashes of of chipotle seasoning or 1/2 tsp chipotle type dipping sauce

salt and freshly ground black pepper as per taste

pepitas

2″ seedless cucumber, unpeeled and thinly sliced

* For sandwiches I slice the  gluten free bread horizontally

Method:

Place the cream cheese, butter and mayonnaise in a bowl and mix well. It is easier to mix if everything is at room temperature.

Add the other ingredients leaving cucumber and pepitas.

Cut crust from the bread slices (for wheat bread you can cut after making the whole sandwich) and spread the mixture.

Place the cucumber slices on the slice and sprinkle some pepitas.

Sandwich them together pressing it slightly. Cut into half, quarter or what ever shape you like.

Enjoy the delicate and fresh flavor of crunchy cucumbers and pepitas with a creamy flavorful spread as a snack or breakfast food.
